Beet and Roquefort Salad

2 wisps of lettuce
1 large beet
 150 grams of Roquefort (or any other blue cheese)
 100 grams of walnuts
100 grams of olive oil
2 flower buds of clove
100 grams of
balsamic vinegar
Total cost: 12 Lari
Serves two

Preparation: 1. Wash lettuce leaves and let dry. 2. Cut cheese into small cubes. 3. Boil the beets until they’re soft, cut into cubes and place in deep plate. 4. Sprinkle cooked beet with 50 grams of olive oil, 50 grams of balsamic vinegar, and salt and pepper to taste. Let stand for 15 minutes. 5. Pour remaining olive oil and balsamic vinegar into salad bowl. Add pinch of sugar, salt and pepper to taste, and mix. 6. Mix together in salad bowl lettuce leaves, cheese cubes, walnuts, beet and oil and vinegar mix. Serve and enjoy a refreshing summer salad!
